Warm Up Your Belly Good

I have been following a Paleo diet now for a week or so. Its been a great way of trying some new recipes…I love new recipes!

On the weekend I was at a market in freezing wet and windy conditions, so imagine my delight when the soup lady set up across from me. I got a little excited. By 11am I was ready for an early lunch and something to warm me from the inside. So I tried their Thai Chicken Soup…yum!! I was instantly a big fan.

Of course I wanted to replicate the recipe and I tonight I did a good job of it tonight, even if I do say so myself.


Thai Chicken Soup

1 tbsp Coconut Oil
2 Chicken breasts
1 medium onion diced
3 cup Vegetable stock (or chicken)
2 tbsn Red Curry paste
1 Lge Chilli deseeded and sliced very thinly
Half a capsicum very thinly sliced.
1 Lime
2 Kaffer Lime leaves sliced
1 tim Coconut Milk

Halve chicken breasts and cook. Let cool then shred.
In a large pot melt the coconut oil. Add onions and fry till opaque.
Add curry paste and warm for a minute.
Add chicken, stock, coconut milk and mix together.
Add capsicum, chilli and kaffer lime leaves.
Simmer for 8-10 mins.
Serve with a squeeze of lime and a pinch of cilantro on top.

*For those not following Paleo, you could serve over vermicelli noodles or rice.

This was delicious, I think its my new fav soup recipe for this winter. And I felt so good after eating it. But I still wanted to try a new dessert recipe too. So…

I found this recipe on Pinterest for Baked Cinnamon Apples while searching for Paleo recipes. Its SO easy and quick and my whole family LOVED it.


Baked Cinnamon Apples

Preheat Oven to approx. 180 degrees
Cut 4 apples into 12 wedges each.
Place in a baking dish
Sprinkle 1 1/2 tbsp Cinnamon over the apples and mix through evenly.
Baked for 20 mins.

*I put a spoon of plain vanilla yogurt on the kids, but they were SO yummy just as they were, really didn’t need it.

My tummy was smiling, it felt so warm and content. Great winter warmer meals.
