Chocolate & Almond Butter Cups

For those of you that aren’t eating sugar or grains (my paleo friends) or just want a little something ‘sweet’ as a treat, here is a new recipe for you. Those of you that also love and know the benefits of coconut oil will also love this one.


Chocolate and Almond Butter Cups

Peanut Layer:
3/4 cup Almond Butter
1/4 cup Coconut Oil
2 Tbsn Raw Honey

Chocolate Layer:
4 tbsn Coconut Oil
4 tbsn Butter
4 tbsn Raw Honey
4 tbsn Cacao

Place almond butter and honey in a small bowl. Melt the first lot of coconut oil and then add to the almond butter mix and stir until well combined. Divide between a silicon muffin tray or silicon moulds. Put tray in freezer.

Now in a small pot melt the second lot of coconut oil and nutterlex/butter, this will only take seconds. Remove from the heat and add the honey and cocoa and whisk quickly till smooth and no lumps. Take the tray from the freezer and spoon the chocolate layer on top of each mould. Pop back into the freezer for 15 – 30 mins.

*You could add vanilla protein powder to the peanut layer for a snack with a boost. I’ll certainly be popping some in my next batch.
*If you would like a thicker chocolate layer, just double those quantities.

Store in the freezer and try not to eat them all in one go! They make a great treat for the kids too.
