One of the big considerations when following a Paleo diet is the refined sugar or grain loaded sauces, and how you will replace them all. Today, I came up with a very tasty Satay Sauce.
Just because you are trying Paleo doesn’t mean you have to miss out on any of the flavour. Curries are a regular at my home, and while the sauces are typically Paleo friendly when made from scratch (no jar bought sauces), they are served with rice and thats certainly not Paleo.
If you haven’t tried cauliflower rice in the Fried Cauliflower Rice recipe I shared with you here, try it. This is a simple curry you can enjoy with your rice alternate.
Chicken Satay with Cauliflower Rice (serves 4)
3 chicken breasts, diced
1 head cauliflower
2 Tbsp coconut oil
1 small onion, halved
2 cloves garlic
1/2 fresh chilli
1cm cube fresh ginger
3/4 cup nut butter or almond butter
3 Tbsp coconut aminos (or tamari sauce)
2 Tbsp lemon Juice
1 Tbsp coconut sugar substitute (or substitute like Natvia)
1/2 cup water
1/2 cup coconut milk
- Cut the florets off the cauliflower and place them in the TM bowl. Using the Turbo button pulse until the cauliflower resembles rice. Put aside in a medium bowl and cover with plastic wrap.
- Place one tablespoon of coconut in a pan, when melted, brown the chicken.
- Place the onion and garlic in the TM bowl and blitz 5 sec/speed 7
- Scrape down side and add the other tablespoon of coconut oil, saute 60 secs/speed 1/100 degrees.
- Add the chilli and ginger and chop 3 secs/speed 7.
- Add all the other ingredients and mix for 10 secs/speed 2
- Make sure its all combined and then pour into pan with browned chicken.
- While that is heating through, place the bowl with cauliflower rice in the microwave and cook for 3 mins. It will steam and cook through.
- Serve your cauliflower rice with your satay chicken and enjoy!
My husband is a big satay lover, the more oil and peanuts the better, but as peanuts are a legume they are off the list. This paleo recipe is the best and closest I have tasted to restaurant satays.
