Another new paleo friendly recipe was concocted tonight when I was looking for inspiration for dinner. After some thought and seeing what I had in the fridge and freezer it was decided.
I also had the pesto that I made here to use up, so it was Chicken Pesto Burgers for our Sunday night dinner.
Chicken Pesto Burgers (makes 8)
4 Chicken breasts
1/2 cup Almond Meal
2 Tbsn Pesto
Salt & Pepper to taste
Put the four chicken breasts into the food processor and chop to a small rough consistency (not minced).
Change the blade in the food processor to the mixing attachment, add the egg, almond meal and salt and pepper. Mix together.
Then add the pesto and mix till just combined.
In a flat pan, heat 1 tablespoon of coconut oil.
Spoon the mixture (approx 2 heaped tablespoons) into the pan and flatten out and shape into round burger shape.
Cook on med to lower heat till browned on both sides.
Serve with salad and enjoy!
