Some days are cooler than others and some you just want a light meal…soup is perfect for these days. Last year I discovered this soup, it quickly became a favourite, and when I started eating Paleo I was so pleased I was able to adapt it easily and continue to enjoy it.
Thai Chicken Soup
1 tbsp Coconut Oil
2 Chicken breasts
1 medium onion diced
3 cup vegetable stock (I use 3 cups water to 1.5 tbsp TM stock concentrate)
2 tbsp curry paste*
1 chilli deseeded, sliced very thinly
Half a capsicum, sliced thinly
2 Kaffer Lime leaves sliced
1 tin coconut milk
2 stalks of lemongrass
1 fresh red chilli
2 cloves of garlic
1tbsp fish sauce
2tbsp tamari sauce
2cm piece of fresh ginger
bunch of fresh coriander
2 jarred bell peppers
1 heaped tsp tomato puree
Optional: 4 kaffir lime leaves
Blend in Thermomix or a food processor until becomes a paste. Store in an air tight jar in fridge.
Halve chicken breasts, then halve again lengthways, so thin. Put a tablespoon of coconut oil in a pan and brown the chicken. Let cool then shred/slice thinly.
Into the TM bowl place the onion and chop 10 sec/speed 4.
Then add the coconut oil and saute 2 mins/100 degrees/speed 1.
Add the curry paste and warm for a 1 min/100 degrees/speed 1.
Add stock, coconut milk, chicken, capsicum, chilli and kaffer lime leaves and cook on Reverse/10 mins/100 degrees/speed 1.
While thats stirring squeeze the lime juice in through the MC hole in lid.
Serve with extra lime and a pinch of coriander on top.
Next time your after a light meal, something to warm you from the inside out, try this soup. Its so tasty and delicious it will please your taste buds. Also a simple one for when you have friends over for lunch.
