Paleo Challenge Day 25 – Chunky Monkey Muffins

There is something about the smell of banana bread throughout the house that is just divine. But, truthfully I didn’t have much success with finding a recipe that worked.

The recipe is from the popular Paleo cookbook Primal Cravings. Its far more successful for me and has all the best bits (and smell) of a good banana bread. These muffins make a great snack, quick breakfast on the run or perfect for a lunch box treat.


Chunky Monkey Muffins

  • 1/2 cup coconut flour
  • 1/2 cup tapioca flour
  • 1 teaspoon baking soda
  • 1/2 cup butter, melted
  • 1/2 cup coconut sugar or honey
  • 1 cup mashed bananas, from ~2 medium bananas
  • 1 teaspoon vanilla extract
  • 4 eggs
  • 1/2 cup Enjoy Life chocolate chips
  • 1/2 cup walnuts, chopped

Preheat oven to 175. Line a standard muffin tin with paper liners.
Place the butter, sugar, bananas, vanilla extract, and eggs into the TM bowl. Whisk together 20 secs/speed 5.
Add in the coconut flour, tapioca flour, and baking soda. Mix through about 20 secs/speed 4.
Gently fold in the chocolate chips and walnuts.
Divide batter among the lined muffin cups.
Bake until the muffins have puffed and the edges have slightly browned, about 20-25 minutes.
*This can be done just the same in a food processor or whisked by hand.

We have these for breakfast or as a snack, they are delicious! My hubby (who isn’t following Paleo) loves these. He says they are just like a normal muffin, taste so yummy and asked to make sure that they were in fact Paleo.

    • I’m not sure this recipe would work without the eggs Amber, but perhaps you could try with a mix of coconut oil? Not only do the eggs act as a binding ingredient but give it lift/body too. Let me know how it goes if you try it out.
