For the Paleo Challenge I shared with you one of my families favourites…the Chunky Monkey Muffins. These are so popular with not only my children, but also their friends that I knew they had to be added to the list for a healthy lunch box snack.
Obviously, when I want to send these to school for morning tea I have to make them nut free. As someone with a member of the family who suffered from a nut allergy, I am all to aware of the consequences of sending my child to school with nut products. So for this recipe I have just removed the walnuts and they are safe to pop in for a yummy, healthy, filling treat for your little ones lunch box that are safe for any nut free school.
Choc Chip Banana Muffins
- 1/2 cup coconut flour
- 1/2 cup tapioca flour
- 1 teaspoon baking soda
- 1/2 cup butter, melted
- 1/2 cup coconut sugar or honey
- 1 cup mashed bananas, from ~2 medium bananas
- 1 teaspoon vanilla extract
- 4 eggs
- 1/2 cup Enjoy Life chocolate chips
Preheat oven to 175 degrees. Line a standard muffin tin with paper liners.
Place the butter, sugar, bananas, vanilla extract, and eggs into the TM bowl. Whisk together 20 secs/speed 5.
Add in the coconut flour, tapioca flour, and baking soda. Mix through about 20 secs/speed 4.
Gently fold in the chocolate chips.
Divide batter among the lined muffin cups.
Bake until the muffins have puffed and the edges have slightly browned, about 20-25 minutes.
*This can be done just the same in a food processor or whisked by hand.
The best thing about this recipe is that you can make them on the weekend, in advance and freeze them. Then as you are packing lunches just get out what you need. This is what I try to do, and I like to make a double batch.
You could also substitute the choc chips with your favourite berry or even dried fruit. Just keep the quantity the same to that of the choc chips.
