Thinking of different meal options and snacks can be the hardest part of any eating style, dare I call it…diet. Not only have I chosen to make a healthy choice by following Paleo for my body, but I must make that same choice each time I prepare food.
This can often be the hardest part for most of us when we make such a big lifestyle change, maintaining the strength to keep making that choice every day. I hope that by me sharing recipes and advice with you it may make each healthier choice easier for you.
Many also suffer with withdrawals when they cute out the refined sugars from their diet. I found it easy to cut out the sugars, but I did still include what I call Paleo sweeteners. Many strict Paleo’s don’t even allow themselves those. I still include dates, honey, pure maple syrup and coconut sugar. Some of you may be better cutting it out completely, but I find I am more likely to crave sweet treats and if I don’t have ‘safe’ sweet options, I make bad choices.
Here is a simple snack thats easy to make, is a great little sweet treat to have on hand (not too sweet), and would make a lovely gift.
350g macadamia nuts
1/2 tsp cinnamon, ground
1/4 cup coconut sugar
- Mix all the ingredients in a bowl and coat the nuts. (There will still be a lot of the sugar in the bottom of the bowl, but once it heats it will stick to the nuts.)
- In a dry hot pan, place all nuts and sugar.
- Toast the nuts. The sugar will start to warm quickly and you need to keep the nuts moving and coat them with the sugar mix.
- Eventually the sugar mix will start to become ‘gooey’ and coat the nuts. Keep toasting them, but be careful not to let the sugar burn.
Keep these nuts in an air tight jar or container and when you want something sweet, have it, and still stay on track with your choices.
