I’ve mentioned before that breakfast can often be the hardest meal to come up with new ideas or recipes when you are following a Paleo diet. As much as I love eggs and bacon, I don’t like them every morning.
The weekend is always a great time to spend a little more time making something tasty. This morning it was crepes.
Paleo Basic Crepes
4 Tbsp Coconut flour
2 tsp Honey
1 cup Coconut milk
2 Tbsp Vanilla extract
Butter to grease the pan
Place all of the ingredients into the Thermomix (or food processor) and mix 5 secs/speed 4.
Scrape down the sides and repeat.
In a hot pan put a small knob of butter to grease the pan.
Place 1/4 cup of mixture into pan and spread out.
Once edges start to brown, flip.
Keep an eye on them as they will cook quickly.
You could serve these crepes with a sweet or savoury filling. My favourite filling would have to be fresh fruit, but this morning I made this strawberry compote to go with ours.
4 cups frozen strawberries.
Place the strawberries into a pot and over a medium heat cook until reduced to sauce consistency.
These are very quick and easy to make. Go on and try them and enjoy!
