Lemon Balls

Today I was given a bag of lemons, so of course I was going to come up with something ‘lemony’ right away. I love lemons. If I was choosing a dessert its always got to be something made with lemons or berries.

We all know balls/bites are super popular at the moment, and rightly so. They can be a great, healthy snack to grab when you are on the go, and the kids love them. These lemon balls are so simple to make and a lovely subtle flavour.1

Lemon Balls

1 cup cashews
1 cup almonds
Zest of 2 lemons
Juice of 2 small lemons
1 cup shredded coconut
2 tbsp raw honey
Extra coconut for rolling

  1. Place the zest into the Thermomix (or food processor) and blitz for 5 secs/ speed 8. Scrape down the sides.
  2. Add the nuts and blend for 5 secs/speed 6 or until finely chopped.
  3. Add in all the other ingredients and blend on speed 5 until the mixture starts to sick together.
  4. Spoon out teaspoons amounts and roll into balls and then roll in the extra coconut.
  5. Refrigerate for 30 mins to firm up.

These have a light flavour, but test the lemon juice, if its very sour you might not need so much juice.
