Rustic Sweet Potato Salad

Anyone else get very bored with salads? Its often a simple garden salad at our house, and its easy to get tired of the same old thing. We were invited to a bbq over the weekend, so I had to put some effort in.

I came up with this quick recipe for this rustic sweet potato salad to take along and there was quickly none left. This recipe will make enough for 4 people, but you could easily double for a ‘take a plate’ to share with everyone.

Rustic Sweet Potato Salad
(Serves 4)

1 medium sweet potato, diced
1/2 red onion, diced
2 large handfuls of baby spinach leaves
8 – 10 small heirloom tomatoes, quartered
1 tbsn pesto
1 tsp lemon juice

Place the diced sweet potato into an oven baking tray. Roast on 180 degrees until cooked through. Let cool completely.
In a medium to large sized mixing bowl, place all the ingredients except the lemon juice.
Mix them through evenly so that all ingredients get lightly covered in the pesto.
Add the lemon juice and gently mix through again.
Serve.

*If you don’t have heirloom tomatoes, then cherry tomatoes would be a good substitute.

Its simple and easy to make with little prep time involved. Perfect to put together quickly when you have a last minute invite to a bbq and you need to bring a salad. Because of the sweet potato its also more filling.

It doesn’t have to be for something special though. If you are looking for a salad to not be bored with at home, then give it a try.

  1. Hi Brooke, I am definitely following your journey! I plan to start the whole30 on april 6. I’m located in the US and I found your blog enroute from your chicken sausage patties. I just got a Thermomix so I was looking for whole30 compliant recipes where I could use the TM! I am definitely excited to start the whole30 and am working on trying to cut most sugars and dairy before then.

    • Welcome Lisa! I’m so glad you found me. How exciting, the Thermomix is an amazing tool. Most of my recipes use it, but I am trying to make more Thermomix specific recipes, where the whole recipe is done in there. If you stay away from my sweets section most of the recipes should comply. There will be more though, I’m creating lots as a travel along and get bored with meat and veg meals 🙂 Please let me know if you need any help along the way.
