Paleo Basil & Spinach Pesto (Dairy Free)

Food should be all about flavour! Right. One of the most flavoursome sauces to use in your cooking I believe is Pesto. You can pop it on a pizza, toss it through zucchini noodles, smear it on meat, use it as a dip and so much more. It was imperative for me early on in my Paleo journey to create a friendly version for my cooking.

Traditional recipes include parmesan cheese, obviously this was the first thing I left out. While it does add more bite, without this cheese the recipe is still delicious.


Paleo Spinach & Basil Pesto

1 handful of baby spinach leaves
1 handful of basil leaves
1/4 cup pine nuts
2 cloves of garlic
Salt & pepper to taste
5 Tbsp olive oil

  1. Put the pine nuts in a pan and toast (just start to brown).
  2. In your Thermomix place the toasted pine nuts, garlic, spinach, basil and salt and pepper to taste. Process it all on speed 6 for 4 seconds, scrape down the bowl and repeat.
  3. Turn the Thermomix to speed 2 and drizzle the olive oil in.
  4. Store in an air-tight jar.

This is so easy to make and is best made fresh. If you did want to make a bigger batch, then I recommend freezing it in individual portions, but for me fresher is better.
