Chicken is the popular white meat in most households. Many of us prepare it the same way day in day out. Today, I wanted something a little different from my chicken. I wanted more flavour. Something that got the taste buds tingly, but not be too spicy for the family. So, I came up with my green chicken and sauce.
Chicken thighs really are a more succulent cut of chicken for this dish. While you could use breast meat if you prefer, it tends to be drier and not as flavoursome. I used to be one of those people who would only eat chicken breast meat. I have been converted though, and really do prefer using thighs more for baking or frying. This recipe would also be perfect to grill on the bbq as well.
The other day I shared my recipe for my Paleo Sweet Chilli Sauce, a great dipping sauce made with all paleo compliant ingredients. Well, here is the recipe that I served it with when I was asked along to a ‘bring-a-plate’ night with friends.
These paleo asian baked meatballs are quick and easy to make, and use common fresh ingredients in most paleo homes. The flavour is subtle and not over powering, so the kids can enjoy them too.
Packing a lunch for school or work can sometimes be a bit of a chore. Here is a simple dish that’s perfect to pack for lunch, maybe even for that family picnic trip to the park. Of course, this recipe is also perfect for a snack, for dinner maybe with some salad, or even as an alternative breakfast option. You can obviously add or omit your favourites. It really is versatile.
Its been too long between posts….
The kids have been on school holidays and as it was the first holidays that I didn’t have to work through preparing for a big event, I was determined just to spend time with the them. We haven’t done anything amazing and haven’t filled in every day keeping busy. We have just been together doing ‘stuff’…and its been great!
As a result though, I’ve been only working as much as I absolutely have too. So posting hasn’t happened. The recipes have still been flowing, so there will be more coming very soon.
Today I made up this recipe at my husbands request. We haven’t ever really eaten baked eggs before, but it was always one of those recipes we thought we would enjoy. So…today we did. Enjoy it that is.

Its also so simple that you literally chop, sprinkle and bake. You can walk away, enjoy your families company, get ready for work and then come back to this delicious and naturally sweet dish.
