Paleo Lunch Box Rolls (Nut & Dairy Free)

Lunch boxes…they can be a bit of a nightmare some days. While I am always keen to make grain free alternatives for my children, they still have gluten-free rolls in their lunch box occasionally. There was only one type I would buy, and it became the only type my children would eat. It was full of seeds and looked like a multi-grain roll, but it had absolutely no flavour. It started as a convenience item, and is still just a convenience item (some days laziness).

I have wanted to find and create an alternative for a long time, but each recipe I tried or altered just didn’t cut the mustard. They were too egg’y, too dry, too soggy, had a weird taste and lets face it kids are all about taste and texture. Finally, I’ve found it though. A roll recipe to do away with the convenient gluten-free rolls I was spending a fortune on.

Paleo Waffles by Danielle Walker (Against All Grain)

Its been many years since I have eaten a waffle, and in fact until the other day, my kids had never eaten a waffle. Go figure! It’s not something that is as big here in Australia as it might be in America perhaps. I’m not sure why that is. I remember having them as a young child when we visited my nan’s, but I think they may have been the packet variety, even though she was a great baker. The last year, though, I have had a need to find myself a waffle iron and make waffles. A Grain Free Lunch Box

In previous posts I have shared with you lunch box recipes that will keep your little ones full throughout their busy days. Today, I thought I would share with you what those grain free lunch boxes actually end up looking like.

All of these items can be prepared in advance and quickly popped into the lunch box by yourself or the child. Most mornings my cherubs actually put their snack items into their own lunch boxes. It gives them some feeling of control, allowing for their individuals tastes or preferences, but it is also one less thing for me to do on already busy mornings.

Birthday Celebrations & Cake Time

Its been a busy week or so in my house. My two children happen to celebrate their birthday’s just 10 days apart (who planned that?). Well, there is actually two years between them, but when you are celebrating with friends and family it can make for a busy time.

This year they are reaching the milestones of 10 and 8. The years have flown by so fast, but I wouldn’t change it for the world. They are two of the most special people I will ever have the privilege to meet. It is my honour to watch them grow, develop and support them in becoming the best version of themselves.
