Paleo Asian Baked Meatballs

The other day I shared my recipe for my Paleo Sweet Chilli Sauce, a great dipping sauce made with all paleo compliant ingredients. Well, here is the recipe that I served it with when I was asked along to a ‘bring-a-plate’ night with friends.

These paleo asian baked meatballs are quick and easy to make, and use common fresh ingredients in most paleo homes. The flavour is subtle and not over powering, so the kids can enjoy them too.

Paleo Sweet Chilli Sauce

Who else misses their condiments. For many it was the ease of opening a bottle of sauce and adding your favourite flavour to a meal. They have become something of a convenience in modern diets, but the idea of quality condiments is about adding extra flavour to plainer foods. I was never a big fan of sauces. I appreciate the taste of fresh foods and never really needed to add another layer. If I enjoyed them, they were usually the homemade variety. Hubby, on the other hand, really loved his sauces.

His favourite would have been sweet chilli sauce. Obviously, the bottled version is packed with a pile of sugars, preservatives, thickeners, and possibly artificial flavours or colours. When he finally joined me in making the switch to paleo, he did miss the sauces, but we came up with alternatives for most of his favourites. When I mentioned I was going to come up with a sweet chilli sauce with paleo compliant ingredients he was excited to say the least.

Paleo Asian Lettuce Cups

Looking for a light mid week meal? Perhaps something you can serve to friends at a dinner party, or as an entree? Then you should try these super easy paleo asian beef lettuce cups. This light meal can be enjoyed as is or as part of a banquet.

My love of asian dishes does not cease. I am always looking for a new way to enjoy the flavours. As the weather warms here, I want lighter meals. I don’t want the heavy comfort food so often enjoyed in the cooler, hibernating months of winter. Though light and easy, I still want to taste those same flavours. This meal ticks those boxes.

Asian Baked Chicken Thighs

Here is a very simple dish to bake that is so simple and easy, but with plenty of flavour. It is also fairly inexpensive, and I know to many families this is very important. The dish is using chicken thighs, which are often slightly cheaper than chicken breasts to buy and they are fantastic to cook with. The meat of thighs stays more moist during cooking and is perfect for saucy dishes like curries and stews.

Chicken thighs are also terrific to bake. I know that I used to always use breast meat for all my dishes and have only recently started cooking more and more with the thighs. Baking the thighs is my new favourite thing to to. It is really simple to lay the thighs in a dish, add some of your favourite flavours and pop in the oven. Dinner done.

Paleo Panang Beef Curry

A couple of weeks ago we joined friends for a ‘Curry Night’. We had to bring a dish and to help my family stick with our healthy eating choices, I brought cauli-rice (my favourite) and this dish…a Paleo Panang Beef Curry.

A Panang curry is a Thai style curry and generally more milder than other Thai curries. Its perfect for the whole family and for sharing with other families.
