My hubby is and always was a jerky lover. When he finally joined me on the paleo journey one of the first things he asked me to make him was some jerky. I’ve made it quite a few times since then. This recipe is a mix of flavours that I always go back to.
This paleo beef jerky recipe is simple to make and is great to have on hand as a snack, whether you’re trying to up your protein, makes snacks that are cost-effective, or just need something convenient to take away camping. It’s also suitable if you are following the Whole30 or 21 Day Sugar Detox (21DSD).
This summer I am challenging myself to experiment with salads. I’m the type of person who is quite happy to have a simple garden salad, no dressing, every day…but I understand not everyone in my family feels the same. So I’m making an effort to make different salads, experiment with flavours, and not stick to my ‘norm’.
It’s also a great way to add more vegetables and fruit to your diet. As well as I eat, I still struggle to eat my daily recommended intake. So here is the first of hopefully a few new salad ideas I’ll share with you.
Chicken is the popular white meat in most households. Many of us prepare it the same way day in day out. Today, I wanted something a little different from my chicken. I wanted more flavour. Something that got the taste buds tingly, but not be too spicy for the family. So, I came up with my green chicken and sauce.
Chicken thighs really are a more succulent cut of chicken for this dish. While you could use breast meat if you prefer, it tends to be drier and not as flavoursome. I used to be one of those people who would only eat chicken breast meat. I have been converted though, and really do prefer using thighs more for baking or frying. This recipe would also be perfect to grill on the bbq as well.
Been missing your oats or porridge? Last week I was contacted by a mum that was making positive changes for her family and trying to eat more paleo meals. But…breakfast was still the one meal she was having trouble letting go of. Her family is a big lover of the humble porridge. Her reason for contacting me was to see if I could come up with a paleo alternative. I’ve thought about a similar recipe to this one for a while now, so it didn’t take much convincing for me to jump at the chance to come up with something that could help her family out.
There were a few stipulations I had to stick to though. Firstly, it had to be nut free. Secondly, the recipe had to be suitable to pop in the slow cooker over night. What a great idea! Pop breakfast in the slow cooker before heading to bed and then waking to breakfast ready to eat. Those few extra minutes of sleep or one less thing to do on a busy morning, that sounds perfect to me.
Its winter and its cold and rainy here today. The perfect weather for comfort food. I’m not talking ‘junk’ comfort food. I’m talking those family meals that leave you feeling warm from the inside out. They make you think of a certain family member, or shared meals that bought you joy. This recipe makes me feel just like that.
