Here’s a great new recipe for the kids, and the kids at heart. Previously, I have shared with you my grain-free chicken nugget recipe. Well, this recipe is a little take on that one, with a bit more flavour. If your looking for something that is going to please a crowd, then here it is.
If you were a fan of that popular fried chicken take away before going paleo, then this recipe is for you. PBC is short for Paleo Baked Chicken, a healthy and delicious fried chicken alternative. I originally came up with this recipe for my kids as a bit of a fun snack, but they have enjoyed it for dinner, for lunch, and also cold in their lunch boxes. Its one of those yummy foods that you might struggle to have just one.
Drumsticks are such an affordable and versatile cut of chicken to work with. They bake, roast, or slow cook beautifully, and are packed with flavour. The meat stays moist when cooked and they also happen to be dirt cheap. I can buy a dozen drumsticks for around $4 – $5 and feed my family of four, plus have leftovers for lunch boxes. You could of course use this recipe on other cuts like the wings or marylands. I know that price can be a factor for many families. Opting for cheaper cuts of quality meat is possibly the best way of saving a buck while still managing to eat paleo.
One of the things that we missed most when my family switched to eating paleo was gravy. Most gravies use a thickener that is grain based, so that was straight away out. We tried a few alternatives, but my gravy loving hubby was especially missing it.
A couple of months ago, I started to experiment and try to make my own paleo version. It took a few attempts, but once I made this delicious recipe several times it never failed. Gravy makes a roast! It just does. Now, you don’t have to miss gravy with your ‘Sunday roast’ anymore.
As many of you have enjoyed your bacon and eggs over the weekend (a daily occurrence in our house), I was trying to come up with a different recipe idea. I won’t ever get sick of bacon and eggs, but it has become my ‘normal’ weekday option. Often, breakfast can be the hardest meal to find alternative recipes for when making the switch to paleo.
Growing up like most other Australian kids I ate my Weetbix just about every morning. I didn’t like it much back then and I can barely look at them these days. Cereal or a slice of toast has become the ‘normal’ start to most peoples days. Its not the normal option, its the convenient one, that we thought was a healthful one. I always thought that the milk with my cereal was what left me feeling a little sick in the stomach, but I know better now.
