Previously, I have shared with you what my kids like to eat, and even what they take to school in their lunch box. Their diet is probably best described as 80/20, with 80 percent being paleo and 20 percent being gluten-free. I’m trying harder and harder to make sure that that 80/20 becomes 90/10, but gluten-free is still something that’s easier to manage when they are out with friends.
You know some nights you just want a healthy meal to suddenly appear in front of you without all the effort. You’ve been working all day, chasing around after the kids, cleaning, playing taxi driver and finally you look at the clock and have to think about what to cook. Yep, today was one of those days. I wasn’t feeling the inspiration but still wanted that healthy, delicious food to magically appear…well it didn’t!
Sorry, but the cold hard truth is that it ain’t going to happen.
So instead I pulled myself together and started making something that took little effort, but was super tasty and a crowd pleaser with all of my mob. I came up with this roasted meal that really is just chopping up some veggies, bit of browning and then waiting for the oven to do the rest.
I’m getting a little sick of hearing about Superfoods. The term first showed up in the 90’s and describes types of foods that are high in certain nutrients and therefore suggested we should include in our diets.
Lately though, since the term has been used more and more food companies have jumped on the bandwagon and have included it in their labelling and advertising, whether or not they live up to the claim.
I’m not saying these foods aren’t great for you, but there are so many ‘super’ foods. When foods are unprocessed, unrefined, in their natural state they are super for you. Foods bought in their natural state are packed with nutrients and antioxidants and they are just ordinary foods.
The weather has started to get cooler, I can deny it no longer, summer is over. When the weather changes so does what you feel like to eat.
We turn to those warm, comforting and hearty dishes that fight the cold from the inside out. That was the mood I was in today. I was also craving a good hit of vegetables and this soup or stew is FULL of them.
